- 1 cup of dried mixed fruit, chopped
- 1 (8 oz.) container low fat vanilla yogurt
- 2 tablespoons of low fat milk
- 2 egg whites, beaten slightly
- 2 tablespoons of canola oil
- 2 tsp. vanilla extract
- 1 1/2 cups of all purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 3/4 cup of brown sugar, firmly packed
- 1/2 cup of white sugar
How to make them:Prepare the Cinnamon Oatmeal Fruit Bars:- Preheat the oven to 350 degrees.
- Before you begin, let you children help collect and measure out the ingredients. Encourage them to read the list aloud. Its a great opportunity for them to practice following directions, as well as basic reading and math skills.
- In a large mixing bowl, lightly toss the brown sugar and white sugar together to combine.
- Then add the yogurt and egg whites.
- Pour in the vanilla, oil, and milk and stir well to combine all the ingredients.
- In a separate bowl combine the flour, soda and cinnamon.
- Toss well to blend everything together.
- Next, place the sugar mixture into the flour mixture and stir well with a rubber spatula. Slowly add the oats as you continue stirring.
- Lastly, add the dried fruit and mix until everything is completely combined.
- Spread the mixture evenly in a large ungreased baking pan.
- Bake the bars for 25 minutes or until a light brown.
- Allow to cool to room temperature before cutting into equal size bars.
