IngredientsFor this recipe, you are going to need the following: - Non stick cooking spray
- 1/2 cup spinach puree
- 1/2 cup of carrot puree
- 2 egg whites
- 2 tablespoons of fat free margarine, softened
- 1/2 cup of brown sugar substitute
- 2 teaspoons of vanilla extract
- 3/4 cup of all purpose flour
- 1/2 teaspoons of baking powder
- 1/2 teaspoon salt
- 3 oz. bittersweet chocolate
- 1/4 cup cocoa powder, unsweetened
How to make it:- Preheat oven to 350 degrees.
- Place the chocolate into a microwave safe bowl and microwave on high for 1 minute.
- Stir and continue melting chocolate in 15 second intervals, stirring after each, until completely smooth and melted.
- Stir the carrot and spinach puree into the melted chocolate.
- Next, add in the sugar substitute, cocoa powder, margarine and vanilla.
- Continue stirring until the mixture becomes creamy and whisk in the egg whites.
- Then add the flour, baking powder and salt.
- Stir with a rubber spatula or wooden spoon until everything is completely combined.
- Smooth batter into prepared pan.
- Bake 30 minutes or until toothpick inserted in center comes out clean.
- The kids will never know there’s carrots and spinach in these yummy brownies. Allow them to cool to room temperature before cutting and serving.
